Boondi Ladoo

Ingredients:

250 gm Besan 2 cups Sugar as needed Orange food colour 2 teaspoon Melon Seeds (roasted) 1 cup Water for Syrup 1 teaspoon Cardamom powder Pistachios for garnishing Oil for frying







Direction:

Sieve the Gram Flour (Besan) in a mixing bowl. Add water to it to make the batter of flowing consistency. Mix it thoroughly so that lumps are not formed. Keep aside for 10-15 minutes. Meanwhile prepare sugar syrup by adding sugar and water in 2:1 ratio. Cook it till sugar dissolves. Heat oil in a pan.Sieve the batter so that if any lumps are formed it will be removed. Add orange colour to it. Now take a ladle with holes and pour mixture in batches from it and deep fry boondi. Don’t fry it for long duration. Boondi with get crispy quickly. Take it out on an absorbent paper. When you are done with boondi, heat the sugar syrup and cook it till syrup becomes (ek tar ki chashni). Add cardamom powder to it and melon seeds. Add Boondi to it and keep stirring on a medium flame till it absorbs the whole syrup. Turn off the gas and let it rest for 10-15 minutes. After 15 minutes boondi will get soft. Now grease your hands with ghee or oil and start making ladoos. You can choose the size of your choice. Garnish with chopped pistachios and enjoy the sweet yummy Boondi Ladoos. My Tip:

Don’t fry BOONDI for long duration. Boondi with get crispy quickly.
