Bombay Biryani

For Boiling Rice:

Rice 3 cup​

Water 4-5 Cups

Oil 1 tbsp

Salt 1 tsp​

Black pepper Whole 5-6

Bay leaf 1-2

Mace 2-3

Star Anise 2

Cinnamon stick 1 inch

Black Cardamom 2

Other Ingredients:​

chicken 250 gm

Ghee 2 tbsp

Ginger garlic paste 1 tbsp​

cumin 2 tsp

Turmeric powder 1 tsp

Hung curd ½ cup

Cumin powder 1 tsp

Red chili 1 tbsp

Coriander powder 1 tbsp

Biryani Masala 1-2 tbsp

Tomato (chopped) 3-4

salt to taste​

Mint leaves ¼ cup

Fresh coriander ¼ cup

Direction:​

  1. In a pan add water, oil, salt and ingredients mentioned for boiling rice.

  2. After par boiling the rice take out the spice with sieve and keep aside. Pour rice in another pan.

  3. In a pan take oil, ginger garlic paste, cumin, chicken, salt, red chili, turmeric powder, coriander powder and cumin powder. Cook it for 2 minutes.

  4. Add hot spices, spice taken out from boiled rice. Tomatoes diced and let it cook for 5-6 minutes.

  5. Now add curd and sit it for 3-4 minutes, after this add 1 cup of water and cook for 10 minutes.

  6. In a pan add a layer of chicken then rice, add Biryani Masala, mint, coriander, layer of chicken and then rice, if left with chicken then pour it on top. Let it cook on low flame for 12-15 minutes.

  • Garnish it with onion rings, lemon slices.
